Carlyle on a warm November day

What just happened?
A few days ago we had 4 inches of snow, today it was near 70 degrees, a warm Spring-type day. We took Bill's mom and went to Carlyle lake, there were lots of people out, bicycling, motorcycling, boating, walking, fishing, kids playing, one last nice day before the cold comes back. About 4:00 the winds changed and you could see the cold front coming in...24 degrees tonight...gotta love Illinois. I'm telling you, people are so crazy...a man had his leaf blower out, trying to blow the leaves against the north wind...what was he thinking? I guess every village has ONE, right? My favorite picture of the day.....seagulls eating french fries.(who knew they liked catsup?) Look at the one in the right hand corner above...he looks like he's saying "What just happened?!"...lol...I hope you all had a great day too!.

Pizza with the WCP girls


I had such a fun evening! Had pizza with some of my World Color Press co-workers (and friends) from years ago. One of them came home from Florida, haven't seen her for 15 years, was great to catch up with everyone! I spent so much time with these ladies every day for years, lots of great memories...yep, we stayed so long we shut down pizza man, cause that's how we r
oll..lol.

Interstellar was Inter-esting at best.

We went to the movies today to see INTERSTELLAR, with Matthew McConaughey, It was very L-O-N-G! Three whole hours, but it was good though..just good night great.  It was hard to follow and then didn't make any sense sometimes... We were going to see the third Hunger Games film, Mockingjay part 1., but it is so annoying when they make two movies out of one book, so I will wait until the final chapter comes out and watch them both. I've read all of the books anyway, so I know how it ends. Then we had dinner at Ryan's. It was a nice day with the husband. I hope you all had a great day as well.

Pineapple coconut crumb muffins..

These are a light muffin with a crunchy top....get that coffee ready!

Ingredients

Crumb Topping
1/3 cup all-purpose flour
1/3 cup sweetened flaked coconut, chopped
3 tablespoons granulated sugar
3 tablespoons finely chopped, roasted, unsalted macadamia nuts
3 tablespoons unsalted butter, softened

Muffin Batter
1-1/3 cups all-purpose flour
½ cup granulated sugar
1-½ teaspoons baking powder
½ teaspoon salt
½ cup sweetened flaked coconut, chopped
2 large eggs
½ cup canola or vegetable oil
3 tablespoons unsweetened pineapple juice, reserved from canned pineapple
¾ cup drained canned unsweetened crushed pineapple

Instructions
  1. Preheat oven to 375°F
  2. Line a 12-cup regular muffin pan with paper liners or grease with nonstick cooking spray.
  3. Topping: In a small bowl, combine flour, coconut, sugar and macadamia nuts. Whisk together until well blended. Using a fork or clean fingers, work in the butter until evenly combined and mixture resembles coarse crumbs and starts to come together.
  4. Muffins: In a large bowl, combine flour, sugar, baking powder and salt. Whisk together until well blended. Stir in coconut.
  5. In medium bowl, whisk eggs until lightly beaten. Gradually whisk in oil until well blended. Stir in pineapple juice.
  6. Add egg mixture to flour mixture and stir just until combined. Fold in pineapple. Spoon batter into prepared muffin pan, filling cups ⅔ full. Crumble topping over top of batter.
  7. Bake for 20 to 22 minutes, or until a wooden pick inserted into center comes out clean. Let cool in pan on a wire rack for 5 minutes. Remove from pan and transfer to a wire rack to cool.

What a great evening, it's snowing, there's about an inch on the ground, we had fish that Bill caught last Spring for supper and I made these snowmen ornaments, which are made out of a log cut into slices, so I have really enjoyed my day. I hope you are all having a great evening too.

New "Do"


Also, I couldn't resist buying this wig from Jenny Holsapple 's new wig shop. I love it. The Red Hat ladies thought it was my real hair and that I had just gotten my hair cut...a nice compliment! I went in Country Creek Treasures and Sally Boyle did not recognize me, until I opened my mouth and started talking...then I ran into Cindy Stanford Dice and she was so sweet as always and said it looked so cute, and of course,mom's loved it the first time I tried it on. Bill likes me better in my normal state, but said that it looked good too, to my surprise. Enough of the hair report, it's been a fun day and now I'm home in my cozy, warm house with my coffee, gonna stay right here until Spring...it's a cold
one outside...

Home Alone....



Bill went to an auction tonight, so I made one of my favorite dishes that is not his favorite at all, he does not care for chicken: lime avacado chicken with salsa (thanks to Stephanie Mount Hawkey and Brad.) So I watched a little tv, had my delicious meal, and finished off with these Pumpkin muffins made with almond flour...oh, and some nice hot coffee. Now I have some blackberry jelly to make and my evening will be done, I hope you all had a great day.

A visit with my bro

Mom and I decided to skip the movies and go to my brother's house ( Milo Knight ) and have pizza and cinna stix and visit with him and my sis in law, Barbara Higgins Knight . We had such a fun day, lots of laughs and good conversation. Love you guys, thanks for having us over. I hope you all enjoyed your day too!.
